1. Melt butter in medium saucepan.
2. Add flour and stir until smooth.
3. Gradually pour in milk. Bring to a boil. Lower heat and cook, stirring constantly, until thickened.
4. Stir about a tablespoon of hot mixture into egg yolk and then pour into pan, stirring constantly for another minute.
5. Stir in 1 tablespoon lemon juice, 1 teaspoon zest and salt.
