1. Combine dry ingredients in mixing bowl.
2. Whisk together egg, honey, oil and buttermilk and stir into dry ingredients until smooth.
3. Remove core of apples with apple corer and cut apple in 1/4-inch slices. If you don’t have an apple corer, slice first and then cut out seeds. ( I used an empty, clean spice jar to cut a small circle in the center).
4. Dip apple slices in batter and place on hot griddle sprayed with cooking spray. Cook until bubbles form around edges. Turn and cook on other side.
5. Serve with Vanilla Caramel Sauce.
