1. Combine flour, sugar, baking powder and salt in mixing bowl.
2. Mix together cream cheese, milk, lemon juice and peel. Beat until smooth. Stir into dry ingredients just until combined. Batter will be lumpy.
3. Using a ladle, pour about 1/4 cup batter onto greased, hot griddle. Cook over medium heat 1 to 2 minutes until bubbles form around edges. Flip and cook on other side for another 1 minute or until golden brown.
4. Top with Raspberry Puree.
