1. Heat olive oil in large skillet.
2. Add potatoes, salt and pepper and cook on medium-high for 10 to 15 minutes, until tender. Push to half of the pan.
3. Add eggs and cook, stirring until set.
4. Add beef and cheese and stir all together.
5. Spoon mixture into a warmed tortilla and add salsa, if desired. Fold sides in and roll.
