1. Whisk together eggs, milk, flour, sugar and cinnamon until smooth.
2. Combine coconut and cornflakes in a shallow pan.
3. Dip bread slices into egg mixture, then coat with coconut mixture.
4. Melt 1 1/2 teaspoons butter in hot skillet.
5. Place bread slices in pan and cook until golden brown, 2 to 3 minutes on each side.
6. Repeat with remaining butter and bread slices.
7. Serve with Coconut Syrup.
