Total Calories: 340
1. Heat skillet to 375°.
2. Combine dry ingredients in mixing bowl.
3. Whisk together buttermilk, milk, oil and eggs.
4. Stir into dry ingredients just until blended.
5. Gently stir in apple and pecans.
6. Batter will be thick so you may need to add more milk if desired.
7. Pour (I like to use a ladle) 1/4 cup batter onto hot griddle that has been coated with cooking spray.
8. Cook about 2 minutes or until bubbles form around edges. Turn and cook for another 2 minutes.
9. Serve with maple syrup.
