1. Heat oven to 325°.
2. Combine cheeses.
3. Spray a 9 x 13-inch baking dish with cooking spray.
4. Layer one-third of the potatoes over bottom of pan. Layer one-third of the ham over potatoes. Sprinkle with one-third of the green onions followed by 1/2 cup cheese. Repeat layers twice.
5. Whisk together eggs, milk, salt, pepper and dry mustard. Pour evenly over top.
6. Cover and bake for 90 minutes.
7. Remove cover and sprinkle with remaining cheese. Bake for another 5 to 10 minutes or until a knife inserted in center comes out clean.
