1. Beat eggs and buttermilk until foamy.
2. Stir in pumpkin and oil.
3. Add flour, sugar, baking powder, baking soda and salt. Stir just until well blended.
4. Using a ladle, pour batter onto hot griddle sprayed with cooking spray. Cook for 2 to 3 minutes until bubbles form around edges of pancake. Flip and cook other side until golden brown.
5. Serve with Maple Cream Cheese Spread.
