1. Heat oven to 350°.
2. Combine milk, sugar, butter, and cinnamon in medium saucepan. Cook over high heat until bubbles form around edges of pan, about 3 minutes.
3. Add apple to scalded milk along with the oats. Cook for 1 minute.
4. Stir a small amount of hot mixture into slightly beaten egg yolks. Add to oat mixture. Stir in vanilla.
5. Pour mixture into 7 x 11-inch baking dish that has been coated with cooking spray.
6. Bake for 15 minutes. Remove from oven and sprinkle lightly with nutmeg.
7. Spoon into bowls and serve with fat-free half and half.
