1. Heat oven to 375°.
2. Whisk together eggs, water, salt and pepper.
3. Pour into 9 x 13-inch baking dish that has been coated with cooking spray.
4. Bake for 10 to 15 minutes until eggs are set.
5. Remove from oven and cut into 6 squares. Top each square with a slice of cheese and then cover with a slice of ham.
6. Cut muffins in half and toast. Sandwich eggs between muffin halves.
