1. Scramble eggs in skillet sprayed with cooking spray until set.
2. Set a tortilla in skillet sprayed with cooking spray and sprinkle with 1/4 cup cheese. Layer half the eggs on top of cheese followed by another 1/4 cup of cheese. Cook about 2 minutes or until the cheese is melted.
3. Place another tortilla on the melted cheese and flip to brown other side, 2–3 minutes.
4. Repeat with remaining tortillas.
5. Cut into 4 triangles and serve with salsa and sour cream.
