1. Shred raw potatoes.
2. Heat oil in frying pan until a couple drops of water sizzle when added to pan.
3. Add potato shreds. Sprinkle with salt and pepper.
4. Turn heat to low and cover pan. Do not stir. Cook 5 to 8 minutes.
5. With a pancake turner, turn the potatoes all at once.
6. Add water and continue cooking another 5 to 8 minutes until crunchy and golden.
