1. Heat oven to 400°.
2. Whisk together eggs, milk, vanilla and flour.
3. Heat 10-inch skillet over medium-high heat and coat with cooking spray.
4. Pour 1/4 cup batter into pan and lift and rotate until batter coats bottom of pan.
5. Cook for about 30 to 40 seconds until edges start to turn brown. Carefully turn on other side. Cook for about 10 seconds. Pick up pan and turn upside down over plate so crepe will fall out.
6. Bring orange juice to a boil in small saucepan.
7. Dissolve cornstarch in cold water and stir slowly into orange juice.
8. Stir in blueberries.
9. Put 3 tablespoons blueberries in each crepe.
10. Roll crepes and place in baking dish that has been coated with cooking spray.
11. Lightly brush butter on top of each crepe.
12. Bake for 15 minutes. Remove from oven and dust with powdered sugar.
