1. Combine flour, shortening, sugar and salt in large bowl and mix on low speed until shortening resembles small peas.
2. Whisk together egg, vinegar and water and pour into dry ingredients. Mix on low just until it forms a ball.
3. Chill for at least 15 minutes. Divide dough in half.
4. Heat oven to 425°.
5. Spray counter with cooking spray. Roll 1 piece of dough out to a square approximately 16 inches by 16 inches. With a pizza cutter, cut into 4-inch squares. Repeat with remaining dough. You will have a total of 32 squares.
5. Place 1 tablespoon of jam in center of each square. Fold dough over and seal edges with a fork. Lightly sprinkle with sugar.
6. Arrange on an ungreased baking sheet . Bake for 10 to 12 minutes until golden brown.
To freeze cooled tarts, place on wax paper covered cookie sheet. Freeze for about an hour, then place in freezer bag. Use within 3 months.
