1. Add yeast to warm water and sprinkle 1 teaspoon sugar over top. Let sit for 5 minutes.
2. Put water, 1/3 cup sugar and butter in microwave dish and cook until butter is melted and sugar is dissolved.
3. In a mixer with a dough hook, pour in butter mixture and then salt and 3 cups flour. Mix until smooth. Add yeast mixture and rest of flour. Knead for 2 to 3 minutes until flour is thoroughly mixed in.
4. Cover and let sit in a warm place for 30 minutes or until double in size.
5. Mix together sugar and cinnamon in small bowl.
6. Spray 3 loaf pans with cooking spray.
7. Divide dough in thirds. Roll each third into a thin rectangle, the width of the bread pan. Sprinkle with 3 tablespoons sugar/cinnamon mixture. Roll up and place in pan, seam side down.
8. Put in a warm place and let raise until dough reaches top of pan.
9. Bake at 350° for about 20 minutes, or until golden brown. Let sit for 10 minutes, then remove from pan. Let cool.
10. Slice bread in 1-inch thick slices.
11. Whisk together eggs, milk and vanilla. Pour into pie pan.
12. Dip bread slices into egg mixture coating both sides. Place on greased hot griddle and cook until golden brown on both sides.
13. Cut each slice into thirds.
14. Dip French toast sticks into French Butter Syrup.
15. To freeze remaining sticks, arrange sticks in a single layer on a wax paper lined baking sheet. Flash freeze for about an hour, then put in freezer bags. Use within 3 months.
