1. Heat oven to 350°.
2. Heat olive oil in small skillet and add spinach and bell peppers. Cook and stir vegetables for 2 minutes.
3. Spray 9-inch baking dish with cooking spray.
4. Beat eggs with water, salt and pepper. Pour into baking dish.
5. Sprinkle cream cheese pieces evenly over eggs and top with vegetables.
6. Bake for 30 minutes or until fritata is puffed and golden brown and set in center.
