1. Heat oven to 400°.
2. Beat eggs until light and fluffy.
3. In small bowl, combine flour, sugar, salt and nutmeg. Add to eggs, alternately with milk. Stir in 4 tablespoons butter and lemon peel.
4. Pour 1 tablespoon butter in each of 3 9-inch pie pans. Divide batter among the 3 pans and shake until even.
5. Bake for 18 to 20 minutes until fluffy and golden brown.
6. While omelet is baking, melt 1/2 cup butter, brown sugar and orange juice in small saucepan. Remove from heat and add bananas.
7. To serve, place omelet on plate. Spoon sauce onto omelet and fold over. Sprinkle with powdered sugar.
