1. Brush bottom and sides of crust with egg yolk. Place on baking sheet. Bake at 450°F for 5 minutes.
2. In small bowl combine 1/4 cup of sugar, flour and 1/2 teaspoon of cinnamon. Sprinkle 2/3 of mixture on crust. Top with apples and pecans. Sprinkle with remaining sugar mixture.
3. Mix sour cream and vanilla. Spread over top of apples and pecans. Mix remaining sugar and remaining cinnamon. Sprinkle over sour cream mixture.
4. Bake on baking sheet at 450°F for 15 minutes. Cool for 1 hour.
5. Garnish as desired. Store in refrigerator.
