1. In medium bowl combine crackers, coconut and chopped almonds.
2. In large mixing bowl beat egg whites and almond extract on high speed of electric mixer until foamy. Gradually add sugar, beating until stiff peaks form. Fold in cracker mixture.
3. Drop by rounded tablespoon onto baking sheet lightly coated with oil. Top each with almond or cherry, if desired. Bake at 400°F for 15 to 20 minutes or until golden brown. Cool on wire rack.
