1. Preheat oven to 350°F.
2. Core, peel and slice apples. Crush crackers into fine crumbs. Combine crumbs, sugar and cinnamon. Cover the bottom of a greased 1 1/2 quart casserole with a layer of sliced apples. Sprinkle apples with crumb-sugar mixture. Repeat until all of the apples and crumb mixture are layered in casserole.
3. Drizzle orange juice over casserole, and dot with butter or margarine. Bake at 350°F for 40 minutes, or until apples are tender. Serve warm or chilled with light cream, if desired.
