1. Chill small mixing bowl and beaters of electric mixer.
2. In large mixing bowl stir together boiling water, sugar and gelatin until sugar and gelatin dissolve. Refrigerate until partially set, stirring ocassionally.
3. In chilled bowl beat whipping cream and almond extract on medium speed of electric mixer until soft peaks form.
4. Beat partially set gelatin mixture on medium speed of electric mixer until foamy. Fold in whipped cream and peaches. Refrigerate, if necessary, until mixture mounds when spooned.
5. Spoon into crust. Refrigerate at least 3 hours or until set. Garnish as desired. Store in refrigerator.
