1. In medium bowl dissolve gelatin in boiling water. Add ice cubes, lemon juice and lemon peel, stirring for 2 to 3 minutes or until mixture thickens.
2. Remove any unmelted ice. Whisk in whipped topping. Refrigerate until mixture mounds when spooned.
3. Spread in crust. Refrigerate at least 4 hours or until set.
4. Garnish as desired. Store in refrigerator.
