1. Chill large mixing bowl and beaters of electric mixer.
2. In large saucepan combine marshmallows and milk. Cook and stir over low heat until marshmallows melt. Stir in creme de menthe or mint extract and green food coloring, if desired.
3. In chilled bowl beat whipping cream and vanilla on medium speed of electric mixer until soft peaks form. Fold in marshmallow mixture. Spread in crust. Freeze at least 4 hours or until firm.
4. Let stand at room temperature for 15 minutes before cutting. Garnish as desired. Store in freezer.
