1. In large bowl stir together cookie crumbs, flour, brown sugar and baking soda. Cut in margarine or butter until crumbly. Stir in 1/2 cup of pecans. Press onto bottom of ungreased 13 x 9 x 2 inch baking pan.
2. Sprinkle cheese over crumb mixture in pan. In large bowl combine apple slices, granulated sugar, remaining 1/2 cup pecans, cinnamon and nutmeg. Spoon over cheese. Bake at 350°F about 45 minutes or until edges are golden and apples are tender. Serve warm.
