1. Preheat oven to 375° F. Brush bottom and sides of crust evenly with egg yolk bake on baking sheet until light brown, about 5 minutes. Remove from oven.
2. Combine sugar and sour cream. Add mincemeat and apples mix well. Turn into crust. Sprinkle with chopped walnuts. Bake on baking sheet 30 to 40 minutes. Cool 2 to 3 hours. Serve with ice cream, if desired.
